A favorite simple meal these days. I joke that I could eat it for every meal, but it’s really not a joke! Garden kale (red russian and lacinato) chopped and massaged in olive oil, then tossed with chopped garden arugula, home made garbanzo beans and a simple dressing of olive oil, apple cider vinegar, tamari and minced garlic. With the addition of avocado, and alongside home baked bread and brie, I can’t think of a better dinner lately. Any simple, fresh foods you are especially enjoying these days?

I would love to try it. Recently I came across a recipe from the Alkaline Sister website for Cannellini & Artichoke Spread. You spread the yummy mixture over toasted bread and top with avocado and tomato slices. It’s absolutely delish. Even my kids love it!

Well, not really fresh, since it’s autumn here…
But I tried this and love it:
Boil sweet potatoes for ten minutes with their peels.
Grate in a medium size. Press the whole thing with the hands as if you were making burgers.
Drizzle some olive oil on a hot pan, and cook there for a few minutes turning them until both sides get golden.
Sprinkle some salt and pepper.
Yum!
That sounds awesome Julie, and so simple. We used to make grain / bean burgers sometimes but it has been a long while. Sweet potato burgers sounds like a fun change.
This looks delicious Abby! Sounds like something I could eat everyday as well. And your addition of the bread with brie is perfect. I was actually at the supermarket yesterday and picked up some brie, looked at the price, and then put it back. But now I am thinking maybe I need to treat myself.
